#1. Tofu scramble with vegetable hash in sage butter: sweet potatoes, parsnips, broccolinis, fennel, purple potatoes, onions, carrots, collard greens! Vegetarian.

#2 Enchiladas with roasted bell peppers, olives, and smoked mozzarella, in sour cream with cilantro and lime. Vegetarian.

#3 lentils, wheat berries and vegetable chunky soup, with parsnips, onions, carrots, swiss chard, tomatoes, celery, and herbs. Vegetarian.

Brown rice mixed with peanuts, water chestnuts, baby corn, bamboo shoots, broccoli, carrots, and scrambled eggs. Topped with baby bok choy in a wine and tamari sauce
